Welcome back to The Massey Blog! Let me present to you this week’s recipe- strawberry jam cookies! These cookies may have just stolen the stop for my all time favorite cookie! These are easy to make and are so good that you will find yourself baking them on repeat! I feel as though these cookie have just the right amount of strawberry to where it is sweet, yet not too overbearing. They taste amazing when they are fresh out of the oven and warm, but are just as tasty days later! You are going to want to give these a try!
Directions:
1.Preaheat oven to 350 degrees F
2.Use mixer to beat the cold butter and sugar until fully combined and a fluffy consistency
3.Add in the egg and vanilla extract and mix until fully combined
4.Add in the flour and baking powder
5.Once fully combined, you will fold in the strawberry jam
6.Use a spoon to measure about 1.5 tsp of cookie dough for each cookie and place them on a lined baking tray about 2 inches apart
7. Bake for 10-12 minutes until cookies have a slightly golden bottom and are cooked all the way through
8.Let the cookies cool for 10-15 minutes.
