
I love any reason to celebrate, but I’m feeling so behind on making St.Patrick’s day fun and special just due to being on the go so much… so I whipped up these fun and festive treats (with the kids’ help) yesterday! I love that the ingredients are super easy, the prep time was basically zero, and they took all of maybe 30 minutes from start to finish. I actually did a Target pick-up for the items too so didn’t even have to walk in the grocery store.
Ingredients:
- 6 tbsp. Unsalted butter
- 16 oz. bag mini marshmallows
- 6 cups Lucky Charms cereal ( we used the St.Patrick’s Special Edition one)
- ¼ c. Lucky Charms marshmallows – optional but made it more festive
- 1 tsp. Vanilla extract

Instructions:
- Melt half the bag of marshmallows, tsp. Of vanilla, and butter in a large pot.
- Once melted, remove from heat and stir in the rest of the regular marshmallows and the Lucky Charms cereal.
- Line a 9×13 pyrex dish with parchment paper, and use a spatula to press the mixture into the dish.
- Press the Lucky Charms marshmallows into the top of the mixture while its still warm. This is more for decoration and to make it look more festive.
- Once it is completely cooled, use the parchment paper to remove it from the dish so you can cut it into squares.
- Serve and enjoy!
- I store mine on the parchment paper in the pyrex dish sealed.
