These are on repeat at our house this time of year so I wanted to share them with you guys!! They are so easy, and pretty healthy minus the butter which you could sub out- and the chocolate chips (that we double in ours haha).
We usually double the recipe too and make a double batch each time because they go so fast!
Recipe is as follows:
- 1 1/4 cups whole wheat flour
- 1/4 cup corn starch
- 1 Tablespoon pumpkin pie spice
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup honey
- 1/3 cup melted butter (we use unsalted butter)
- 1 cup canned pumpkin
- 1 cup semi-sweet chocolate chips
Instructions:
- Pre-heat oven to 350 degrees Fahrenheit. Spray a standard 12 cup muffin tin with non-stick cooking spray (you can also use liners).
- Whisk dry ingredients together : flour, cornstarch, pumpkin spice, baking soda, baking powder, and salt.
- Mix wet ingredients- eggs, melted butter, honey, and pumpkin puree.
- Make a well in center of dry ingredients and add pumpkin mixture and chocolate chips. Mix until just combined- be careful not to over-mix.
- Spoon batter into muffin pan, filling each cup 2/3 full or a little more if you want larger muffins. Bake for 16-18 minutes or until toothpick comes out clean.
