This week we are making grandmother’s icebox cookies! I am super excited to share this recipe with you because it is one that we have been making in my family since I was a little girl. This was one of the recipes that my mother passed down to me and one that I will do the same for my children! They love to assist me in anyway in the kitchen, and there is just something extra special about baking recipes that have been in our family for years! There are few things that I love more than getting to listen to the sweet conversations that go on when they are working together especially when they are baking!
One of the reasons I love these cookies so much is that not only are they delicious, but the dough can also be stored in a freezer for months after being prepared. What could be better than some prepared cookie dough waiting for your in you freezer?! This is perfect for the nights where are you craving something sweet, but do not have the motivation to bake them from scratch. I promise you are not going to regret making these!
Directions:
1. Cream margarine and sugar
2.Beat in the 3 eggs and then stir in the nuts
3. Sift the flour with salt, baking soda, and cinnamon then add to the mixture
4. Take the mixture and mold it into a ball of dough
5.Chill the dough and shape it into 10-12 inch rolls that are 1 inch in diameter
6. Wrap the rolls in wax paper and aluminum foil and store in freezer
7. When frozen, slice thinly and bake at 350 degrees Fahrenheit for 8-10 minutes
8. Rolls may be prepared and kept in the freezer for months, using as needed
9. Enjoy!
