Ok guys these are such an easy snack for the whole family that also have protein, carbs, and healthy fats! I will usually double the recipe (hello- four kids who eat more and more every day ha), and keep them in an airtight container in the fridge. They usually don’t last long because Hayes thinks they are cookies lol.
Ingredients: (makes 21 balls)
- 2 cups gluten free oats- VERY lightly pulsed in food processor
- 1 cup natural nut butter- I used peanut butter for these but I love almond or cashew too.
- 2/3 cup honey
- 1 cup chocolate chips- we usually compromise here (the kids love the Nestle semi-sweet) but sometimes I sneak in the Lily’s dairy free kind for a healthier option
- 1 scoop vanilla protein powder- you can also use chocolate to switch it up
- tsp vanilla extract
- sprinkle of sea salt
- other optional add ins could be dried fruit, unsweetened shredded coconut, chia seeds)
- This may be the easiest thing ever, but we just mixed all the wet ingredients together first.
- In a separate bowl mix the dry ingredients.
- Mix the wet and dry ingredients together- you can use a mixer with paddles if that is easier, but we just did it all by hand- then roll into balls. Place in airtight container and store in fridge.
- If your bites turn out too dry you can add a little more nut butter and honey (I have had to do this before).
