Even though we have a few weeks of school left, it’s starting to feel more and more like summertime over here. I’m dreaming of lazy summer days spent outside and yummy summer treats, which led us to our search for some cute, easy, and fun treats that were a perfect example of “summer,” and this was easily the favorite! The kids loved making them, and they didn’t require many ingredients or much effort!
Ingredients:
Green Outer layer:
- 1 1/2 Tbsp salted butter
- 2 1/2 cups miniature marshmallows
- Green gel food coloring
- 2 cups Rice Krispies cereal
Inner Red Layer
- 2 Tbsp salted butter
- 3 1/2 cups miniature marshmallows
- 3 cups Rice Krispies cereal
- Red gel food coloring
- 2-3 tsp chocolate chips
Also needed:
- 9 inch cake pan
- cooking spray
- popsicle sticks
Spray your cake pan with the nonstick cooking spray. I used coconut oil spray, but any will work.
Next, melt your 1 1/2 Tbsp salted butter and 2 1/2 cups mini marshmallows in saucepan over low heat. I also mixed in my green food coloring at this point too. Once the butter and marshmallows are melted, remove from heat and stir in 2 cups Rice Krispies cereal. Mix well and push against sides of your sprayed cake pan. I had to spray my hands with the cooking spray to keep it from sticking to my hands.
After the rind is all in place, wash and dry your pan and return to heat. Melt 2 Tbsp butter with 3 1/2 cups mini marshmallows, also adding in your red food coloring. Once all melted, remove from heat and mix in 3 cups Rice Krispies cereal. Once mixed press this into the middle of your cake pan, making sure to press it against the green rind well.
When it cools, add your chocolate chips and cut into slices- we did 6 slices. Then you can remove from pan and add your popsicle sticks and done! Such a fun and easy summery treat!
