Mmmmm!!! The smell of this bread fills our entire house when I make it. Literally just caught one of the kids sneaking a piece before it even finished cooling! For some reason, as soon as it starts to get closer to fall, I break out the baking supplies and oven mits and the fall baking commences. Just something so homey and cozy about baking during the cooler months, and even though it’s still warm outside- I have started my baking routine.
The gym I have been going to for 9 years has an amazing cookbook (you can grab it HERE ), and one of my favorite recipes is the Protein Banana Bread! So, I took their recipe and tweaked it a bit to make Pumpkin Protein Bread!! It’s healthy, and you can literally tweak it and make so many variations! I love to use the original recipe and add in some blueberries too! SO GOOD!
Directions:
1. Pulse everything a few times in food processor but don’t puree.
2. Next, fold in chocolate chips with spatula.
3. Bake at 350 for 25-30 minutes
4. Check at 25 minutes with a toothpick to determine if it will need 5 more minutes.
5. Let cool and then enjoy!
